I'm trying, I really am!!

I'm really trying to eat right....and would love any help anyone can offer.  I'm not going to "blog" about my dieting woe's because I just can't put myself out there like that!!!  BUT I will share something if I think it is good enough to share....and today I have what I think is a "Good Enough!"

It is a dinner I made this week that was good, great, yummy.........................

Ok - I didn't have a recipe for this but it was so good I want to make it again this weekend.

I cooked a bag of the precooked chicken strips (Tysons maybe??) in pam spray.  I used a wok type pan so that I could push the meat up to the sides when it was done.  Added 2 tablespoons olive oil and saute'd onions, minced garlic, mushrooms and carrots.  When that looked semi done, I added the chicken to it...added a can of diced tomatoes.  Once that was bubbly - added a bag of raw spinach and sprinkled some italian seasoning.  Let the spinach cook down and it was finished.  Served it over thin spaghetti and sprinked a very very little bit of low fat mozzarella cheese.


Thought I would share!  My family loved it.  That and my new obsession of the Newman's Own low Fat Sesame Ginger salad dressing which is 1 point for 2 tablespoons (thanks Peggy!) over a salad and you've got a wonderful fast meal.

Happy Valentines Day!

Today is a day to think a little more about those we love I guess.  I am so blessed by the family and friends I have in my life.  There is one little guy who spreads joy to all that he is around.  He is so sweet and the apple of his Mimi's eye.  Last week he spent the night with us and whenever he does, we just laugh and laugh.  Here are a few pictures of his visit.  The first one is his funny hat.  Then there was a beam of sunshine shining in my kitchen.  He kept walking through it and making the funniest face.  Then of course he had to play the guitar.  Haven't decided which he loves to do the most yet - play ball or play the guitar.  What a joy to watch him grow.  Thank Heaven for grandchildren and for little Valentines!

The Value of a Friend!

Yesterday Me and my four sisterfriends went to dinner.  Haven't been able to do that in a while and it is so nice to get together.  I am blessed beyond measure!  At the drop of a hat I know good and well that those four girls would drop everything they were doing and come to my side.  Thank you Lord for Sue, Beth, Amber & Julie!!

For Brad.....

Brad - this one is for you....cause for some reason Blogs get on your nerves.


Today me, Ash, Bethany, Pop Pop and Dylan went to the outlets (Brad had to work.  Tried to get Kyle to go with us but he said no thanks.  I told him that once he got married...his wife was going to like us...and to shop - then he would have to go).

Wanted to go to the outlets because...I wanted a new purse and Coach emailed me and told me they would give me 30% off if I would just come visit....but only through tomorrow....and everyone knows that I go to church on Sunday, then sleep.  So off to Williamsburg we the pouring rain. Why does it always rain when I go to the outlets...reminded me of Thanksgiving night of 2009.  Rain, sleet, thunder, lightning, shuttle bus, all nighter, Ashley & Red Bull...and lots of laughing.  Anyway - I had to sell all of these.......

Visited a few other stores.  Of course Bethany ended up with new boots and a few other things.  Then we finished the day with lunch at Pierce's BBQ.  Yummmm!  We had a nice time.  Dylan liked Pierces and he loves to dip fries in ketchup!

Any day with my family is a good day!!!

Motivated by "Loves to Laugh"

Nothing like a good ole kick in the bottom to get the year going.  Not sure what happened in January but I feel like I slept half all of it away.  It was cold and I just couldn't shake December.

Well...back to the land of the living in February....woo hoo.

My BFF has started a new blog and it looks so fresh that it motivated me to kick it up I guess.  AND I finally got the ole sewing machine out and made sweet Ella a Valentine's Day shirt.  Here it is.  Got the shirts on clearance at Target.  Always go through the clearance racks to try to find kids shirts cheap.  Let me know if you run across any.  These were PERFECT for Valentines day....but they didn't have many.
