I'm trying, I really am!!

I'm really trying to eat right....and would love any help anyone can offer.  I'm not going to "blog" about my dieting woe's because I just can't put myself out there like that!!!  BUT I will share something if I think it is good enough to share....and today I have what I think is a "Good Enough!"

It is a dinner I made this week that was good, great, yummy.........................


Ok - I didn't have a recipe for this but it was so good I want to make it again this weekend.

I cooked a bag of the precooked chicken strips (Tysons maybe??) in pam spray.  I used a wok type pan so that I could push the meat up to the sides when it was done.  Added 2 tablespoons olive oil and saute'd onions, minced garlic, mushrooms and carrots.  When that looked semi done, I added the chicken to it...added a can of diced tomatoes.  Once that was bubbly - added a bag of raw spinach and sprinkled some italian seasoning.  Let the spinach cook down and it was finished.  Served it over thin spaghetti and sprinked a very very little bit of low fat mozzarella cheese.

Delish!!!

Thought I would share!  My family loved it.  That and my new obsession of the Newman's Own low Fat Sesame Ginger salad dressing which is 1 point for 2 tablespoons (thanks Peggy!) over a salad and you've got a wonderful fast meal.

    Glad to be following you! I love to see the things you make!

    Okay - the eating thing is tough, I agree! The best thing I can tell you is to try to eat LESS -way less!! That's the best thing I ever did! It's tough at first, but I promise it gets easier. Then eat as many things as you can in their most natural state, so whole foods not processed foods. I try not to eat anything if I can't pronounce even one of the ingredients either! This one is the toughest!
    The dish you made sounds great - I will be trying it!

  2. Thanks for the dinner tip. I like your blog. Found it sort of by surfing around. I always struggle with dieting too! And I love to sew! And, best of all, I know the Lord Jesus loves me! So we have some things in common. Good going with your blog! Sylvia
